Description

This Weeknight Bouillabaisse brings bold French flavor to your table in under an hour. It’s light, aromatic, and perfect for cozy seafood dinners without the fuss.


Ingredients

  • 1 pound firm white fish (rockfish, halibut, hake, or salmon)
  • 8 ounces shellfish (mussels or littleneck clams, optional)
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 leeks, thinly sliced (white and light green parts only)
  • 1 medium yellow onion, halved and thinly sliced
  • 1 small fennel bulb, thinly sliced (fronds reserved)
  • 6 garlic cloves, minced
  • 1 teaspoon fine salt
  • 1½ cups dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 4 cups water or seafood stock
  • 4–5 ripe plum tomatoes, grated
  • A pinch of saffron threads
  • 1 pound yellow potatoes, diced (optional)
  • Freshly ground black pepper
  • 5 tablespoons chopped fresh parsley
  • Rustic bread, toasted (for serving)

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add leeks, onion, fennel, garlic, and salt. Cook for 8–10 minutes until softened and fragrant.
  2. Pour in white wine. Simmer 3–4 minutes until slightly reduced.
  3. Add grated tomatoes, saffron, and stock or water. If using potatoes, add them now. Simmer 15 minutes until potatoes are tender and broth is rich.
  4. Gently add fish and shellfish. Simmer for 5 minutes until fish is opaque and shellfish have opened.
  5. Season with pepper, sprinkle with parsley, and serve hot with toasted bread.

Notes

Use any firm white fish and optional shellfish. Don’t overcook the seafood — add it last for best texture. For more heat, add red pepper flakes or harissa.
