These quick and easy Vegetarian Tostadas are the ultimate weeknight dinner—crispy, flavorful, kid-approved, and customizable in just 15 minutes!

- 8 whole wheat or corn tortillas
- 1 (15 oz) can vegetarian refried beans
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1 (15 oz) can black beans, rinsed and drained
- 2 ripe avocados, mashed
- 1 cup pico de gallo
- 1/3 cup crumbled feta or Cotija cheese
- Fresh cilantro, chopped (optional)
Instructions
- Set oven to broil and line a baking sheet with foil.
- Place tortillas on the baking sheet and broil for 2–3 minutes until lightly crisp and golden.
- In a bowl, mix refried beans with cumin, garlic powder, and chili powder.
- Spread about 3 tablespoons of seasoned beans on each toasted tortilla.
- Top each with 1/4 cup of black beans.
- Broil again on middle rack for 3 minutes until edges are crisp and beans are warm.
- Top each tostada with mashed avocado, pico de gallo, crumbled cheese, and cilantro if using.
Notes
Use sturdy tortillas to prevent tearing. Don’t overload with toppings and serve immediately for the best crunch.
