- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- 16 oz button mushrooms, cleaned and sliced
- 10 oz cherry tomatoes
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, roughly chopped
- 1 cup vegetable broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
- In a large sauté pan, melt the butter over medium heat. Add salt, oregano, red pepper flakes, smoked paprika, and black pepper. Stir and let bloom for 1 minute.
- Add sliced mushrooms, cherry tomatoes, garlic, and sun-dried tomatoes. Cook uncovered for about 15 minutes, stirring occasionally, until mushrooms soften and tomatoes begin to burst.
- Pour in the vegetable broth. Simmer uncovered for 10 minutes until reduced and glossy.
- Turn off heat and stir in the heavy cream and parmesan until fully combined and creamy.
- Top with fresh chopped basil and serve hot.
Notes
Serve over pasta, rice, mashed potatoes, toast, or even sautéed greens. For a vegan version, substitute with coconut milk, vegan butter, and dairy-free cheese. Adjust spice levels to taste.
