Creamy, garlicky, and packed with bold Tuscan flavors, these Marry Me Mushrooms are the ultimate vegetarian comfort food—easy enough for weeknights, impressive enough for guests.


Ingredients

  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • 16 oz button mushrooms, cleaned and sliced
  • 10 oz cherry tomatoes
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, roughly chopped
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. In a large sauté pan, melt the butter over medium heat. Add salt, oregano, red pepper flakes, smoked paprika, and black pepper. Stir and let bloom for 1 minute.
  2. Add sliced mushrooms, cherry tomatoes, garlic, and sun-dried tomatoes. Cook uncovered for about 15 minutes, stirring occasionally, until mushrooms soften and tomatoes begin to burst.
  3. Pour in the vegetable broth. Simmer uncovered for 10 minutes until reduced and glossy.
  4. Turn off heat and stir in the heavy cream and parmesan until fully combined and creamy.
  5. Top with fresh chopped basil and serve hot.

Notes

Serve over pasta, rice, mashed potatoes, toast, or even sautéed greens. For a vegan version, substitute with coconut milk, vegan butter, and dairy-free cheese. Adjust spice levels to taste.
