Description
Rich, chocolatey Turtle Thumbprint Cookies filled with gooey caramel and topped with a silky chocolate drizzle. Like the classic turtle candies in soft, buttery cookie form.

- 1 cup all-purpose flour
- ⅓ cup cocoa powder
- ¼ teaspoon salt
- ½ cup butter, softened
- ⅔ cup granulated sugar
- 1 large egg, separated
- 1 additional egg white
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1¼ cups finely chopped pecans
- 18–20 caramels, unwrapped
- 4 tablespoons heavy cream
- 2 ounces semi-sweet chocolate or melting chocolate, for drizzle
Instructions
- In a medium bowl, whisk together flour, cocoa, and salt.
- In another bowl, beat butter and sugar until light and fluffy (about 2 minutes).
- Add egg yolk, milk, and vanilla extract. Mix until smooth.
- Gradually add dry ingredients to wet ingredients. Cover and refrigerate dough for 1 hour.
- Preheat oven to 350°F (175°C). Whisk egg whites in a small bowl and place chopped pecans in another.
- Roll chilled dough into 1-inch balls. Dip in egg whites, then roll in pecans.
- Place on greased baking sheet, 2 inches apart. Press a ½ teaspoon into each ball to form an indentation.
- Bake for 8–10 minutes. Repress centers if needed while cookies are still warm.
- Melt caramels and heavy cream in microwave, stirring every 30 seconds until smooth.
- Fill each indentation with caramel. Cool cookies for 10 minutes on sheet before transferring to a wire rack.
- Melt chocolate and drizzle over cooled cookies. Let set before serving or storing.
Notes
Chill dough for easier shaping. Use soft, good-quality caramels. Repress indentations after baking to hold caramel. Store in airtight container for up to 5 days.
