- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon cayenne pepper
- 1 can (28 ounces) crushed tomatoes
- 1 cup chicken broth
Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Add onion and garlic. Sauté until soft and fragrant.
- Add ground turkey and cook until browned, breaking it into crumbles.
- Stir in chili powder, cumin, oregano, smoked paprika, salt, and cayenne. Let the spices bloom for 1–2 minutes.
- Add bell peppers, crushed tomatoes, and chicken broth. Stir to combine.
- Bring to a boil, then reduce to a simmer. Cook for 15–20 minutes, stirring occasionally.
- Taste and adjust seasonings as needed.
Notes
To thicken the chili, simmer uncovered for a few extra minutes. For added smokiness, stir in a splash of adobo sauce. Leftovers taste even better the next day!
