Description

Ingredients

  • 1 tbsp olive oil
  • ½ medium onion, finely chopped
  • 1 tsp fresh grated ginger
  • 3 cloves garlic, minced
  • 4 heaping tablespoons Thai red curry paste
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • Juice of 1 lime
  • 3.5 oz uncooked rice noodles
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • A generous handful of fresh basil, torn
  • Fresh cilantro, chopped
  • Chopped scallions for garnish
  • Salt and pepper to taste
  • Lime wedges for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for about 5 minutes until softened and golden.
  2. Add grated ginger, minced garlic, and red curry paste. Cook for another 30 seconds until fragrant.
  3. Add chicken broth, water, and lime juice to the pot. Bring to a gentle boil. Stir in the rice noodles and cook according to package instructions.
  4. Pour in coconut milk and shredded chicken. Stir well and reduce heat to medium-low. Simmer for about 10 minutes, until noodles are cooked and flavors have melded.
  5. Stir in fresh basil, cilantro, and chopped scallions. Season with salt and pepper to taste. If soup is too thick, add more broth to loosen it up.
  6. Serve hot, garnished with extra lime wedges on the side for added zest.

Notes

This soup is incredibly versatile! Swap chicken for tofu or shrimp, add extra veggies like bell peppers or spinach, and adjust the spice level to your liking.
