Description

Creamy, fruity, and made for summer – this Summer Berry and Peach Cheesecake features a buttery graham cracker crust, silky cheesecake filling, and a crown of vibrant fresh berries and peaches. Perfect for potlucks, BBQs, or sunny porch slices.

  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 tablespoons fresh lemon juice
  • 1 cup sliced strawberries
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 ripe peaches, thinly sliced
  • 2 tablespoons apricot jam (optional, for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter until combined. Press into a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. In a large bowl, beat softened cream cheese until smooth. Add sugar and mix until light and fluffy. Add eggs one at a time, mixing gently.
  3. Stir in vanilla extract, sour cream, and lemon juice until just combined. Do not overmix.
  4. Pour filling into cooled crust. Smooth the top and tap pan gently to release air bubbles. Bake at 325°F (163°C) for 50–60 minutes, then let cool in oven for 1 hour with the door slightly open.
  5. Refrigerate cheesecake for at least 4 hours or overnight.
  6. Top with sliced peaches and fresh berries. For a glossy finish, warm apricot jam with a splash of water and brush over the fruit.
  7. Slice using a warm knife, serve chilled, and enjoy!

Notes

Use room-temperature cream cheese for the smoothest texture. Chill thoroughly before topping. For a no-bake version, skip baking the filling and chill for 6–8 hours until set.
