This Stuffed Spaghetti Squash is a healthy, comforting meal that brings together roasted spaghetti squash, Italian sausage, broccoli, and cheddar cheese. It’s an easy-to-make, low-carb alternative to pasta that’s perfect for the whole family!

- For the Squash:
- 2 medium spaghetti squash
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the Stuffing:
- 1 tablespoon olive oil
- 16 oz spicy Italian sausage (crumbled)
- 10 oz broccoli florets (about 4–5 cups)
- 6 oz shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Microwave the squash for 5-10 minutes before cutting to soften the tough skin. Slice the squash in half lengthwise, scoop out seeds, drizzle with olive oil, salt, and pepper, and place cut-side down on the baking sheet.
- Roast for 30-40 minutes until tender.
- While the squash roasts, blanch the broccoli for 4 minutes until bright green, then drain. Cook the sausage in olive oil until browned, then combine with the broccoli.
- Flip the squash halves, scrape out spaghetti-like strands with a fork, and stuff with the sausage-broccoli mixture. Top with shredded cheddar cheese.
- Return to the oven and bake for 10-15 minutes, or until cheese is melted and bubbly. Optionally broil for a minute to golden the top.
- Let cool slightly before serving.
Notes
Feel free to experiment with different sausages, cheeses, and veggies. Add more vegetables like spinach, mushrooms, or zucchini to the stuffing for added nutrition. This dish is easily customizable!
