- 4 cups chopped rhubarb
- 2 cups quartered strawberries
- 3/4 cup white granulated sugar
- 1 1/2 tbsp cornstarch
- 2 tbsp orange juice
- 1 cup all-purpose flour
- 3/4 cup light brown sugar
- 3/4 cup old-fashioned rolled oats
- 3/4 tsp cinnamon
- 1/2 tsp kosher salt
- 1/2 cup unsalted butter, cold and cut into small pieces
Instructions
- Preheat your oven to 350°F and butter a 9×9-inch pan. Set aside.
- In a large bowl, combine the rhubarb, strawberries, white sugar, orange juice, and cornstarch. Stir to coat everything, then pour the mixture into the prepared baking dish.
- In the same bowl, mix the flour, brown sugar, oats, cinnamon, and salt. Add the cold butter and use your fingers or a pastry cutter to work it into the dry mixture until it forms pea-sized pieces.
- Spread the crumble topping evenly over the fruit filling.
- Bake for 50-60 minutes or until the filling is bubbling and the topping is golden brown. Let cool for 1-2 hours before serving.
Notes
For a crunchy topping, make sure to use cold butter. If using frozen fruit, be sure to thaw and drain it before adding to the crumble to avoid excess liquid.
