Description

  • 4 cups chopped rhubarb
  • 2 cups quartered strawberries
  • 3/4 cup white granulated sugar
  • 1 1/2 tbsp cornstarch
  • 2 tbsp orange juice
  • 1 cup all-purpose flour
  • 3/4 cup light brown sugar
  • 3/4 cup old-fashioned rolled oats
  • 3/4 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat your oven to 350°F and butter a 9×9-inch pan. Set aside.
  2. In a large bowl, combine the rhubarb, strawberries, white sugar, orange juice, and cornstarch. Stir to coat everything, then pour the mixture into the prepared baking dish.
  3. In the same bowl, mix the flour, brown sugar, oats, cinnamon, and salt. Add the cold butter and use your fingers or a pastry cutter to work it into the dry mixture until it forms pea-sized pieces.
  4. Spread the crumble topping evenly over the fruit filling.
  5. Bake for 50-60 minutes or until the filling is bubbling and the topping is golden brown. Let cool for 1-2 hours before serving.

Notes

For a crunchy topping, make sure to use cold butter. If using frozen fruit, be sure to thaw and drain it before adding to the crumble to avoid excess liquid.
