- 1 cup milk
- 1/2 cup butter, room temperature
- 1/2 cup granulated sugar

- 1 teaspoon vanilla extract
- 1 cup all-purpose flour

- 1 cup fresh strawberries, chopped

Instructions
- Combine rolled oats and milk in a bowl and let soak for 10 to 15 minutes.
- Preheat oven to 375°F (190°C) and line a muffin tin with 6 liners.
- Chop strawberries into small pieces and set aside.
- Cream butter and sugar together until light and fluffy.
- Add egg and vanilla extract and mix until combined.
- Stir in the soaked oat mixture.
- In a separate bowl, mix flour, baking powder, and salt.
- Gently fold dry ingredients into the wet mixture.
- Fold in chopped strawberries carefully.
- Divide batter evenly into muffin liners.
- Sprinkle tops with coarse sugar and extra oats if desired.
- Bake for 30 to 35 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
Do not skip soaking the oats as it ensures a soft texture. Use ripe but firm strawberries to avoid excess moisture. Do not overmix the batter to keep muffins tender.
