  • 1 box strawberry cake mix (15.25 ounces)
  • 3 large eggs, room temperature
  • 1 cup water
  • 1/2 cup vegetable oil
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 1/2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 cup diced fresh strawberries
  • 2 cups white chocolate chips
  • Vanilla ice cream (optional for serving)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking pan. Line with parchment paper if desired.
  2. In a large bowl, combine strawberry cake mix, eggs, water, and vegetable oil. Beat for 2 to 3 minutes until smooth.
  3. Pour batter into prepared pan and bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool completely before adding the topping.
  5. In a separate bowl, beat softened cream cheese until smooth.
  6. Add melted butter and mix well.

Notes

Store covered in the refrigerator for 3 to 4 days. Let sit at room temperature for 20 minutes before serving for best texture. Frozen strawberries can be used if thawed and drained well.
