Description

These Strawberry Cheesecake Cookies combine soft, strawberry-flavored cookies with a creamy cheesecake filling. They’re easy to make, indulgent, and perfect for any occasion.


Ingredients

  • 1 box (15.25 oz) strawberry cake mix
  • 2 large eggs
  • ½ cup salted butter (softened)
  • ½ cup white chocolate chips
  • 1 cup fresh strawberries (finely diced)
  • 6 oz cream cheese (softened)
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix strawberry cake mix, eggs, and softened butter until smooth. Fold in white chocolate chips and diced strawberries.
  3. Chill the dough for 30 minutes.
  4. For the filling, beat cream cheese and powdered sugar until smooth. Form small dollops of filling and freeze them for at least 1 hour.
  5. Preheat oven and assemble the cookies by wrapping dough around the frozen cheesecake filling.
  6. Bake for 13-16 minutes until edges are golden brown and center is soft but set. Let cool before transferring to a wire rack.

Notes

For the best results, chill the dough and freeze the cheesecake filling to prevent it from oozing out during baking.
