- 1 box (15.25 oz) strawberry cake mix
- 2 large eggs
- ½ cup salted butter (softened)
- ½ cup white chocolate chips
- 1 cup fresh strawberries (finely diced)
- 6 oz cream cheese (softened)
- ½ cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix strawberry cake mix, eggs, and softened butter until smooth. Fold in white chocolate chips and diced strawberries.
- Chill the dough for 30 minutes.
- For the filling, beat cream cheese and powdered sugar until smooth. Form small dollops of filling and freeze them for at least 1 hour.
- Preheat oven and assemble the cookies by wrapping dough around the frozen cheesecake filling.
- Bake for 13-16 minutes until edges are golden brown and center is soft but set. Let cool before transferring to a wire rack.
Notes
For the best results, chill the dough and freeze the cheesecake filling to prevent it from oozing out during baking.
