Description
These Starbucks Copycat Ginger Molasses Cookies are soft, chewy, and perfectly spiced — just like the bakery favorite, but even better homemade.
Ingredients
Scale
- 2 ¼ cups all-purpose flour
- 1 cup dark brown sugar
- ¾ cup unsalted butter, softened
- ¼ cup light molasses
- 1 large egg
- 2 teaspoons baking soda
- 1 ¼ teaspoons ground ginger
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ teaspoon ground nutmeg
- ¼ cup white sugar (for rolling)
Instructions
- Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large bowl, beat butter and brown sugar with a mixer for 3–4 minutes until fluffy.
- Add molasses and egg, then mix until smooth and creamy.
- In a separate bowl, sift together flour, baking soda, salt, ginger, cinnamon, and nutmeg.
- Gradually mix dry ingredients into wet ingredients until a thick dough forms.
- Roll ¼ cup of dough into balls, coat in white sugar, flatten slightly, and place on baking sheet.
- Bake one tray at a time for 10–15 minutes, until edges are set and tops are crackled.
- Cool cookies on sheet for a few minutes, then transfer to wire rack to finish cooling.
Notes
Use fresh spices for bold flavor. Chill dough between batches to prevent spreading. Cookies can be frozen baked or unbaked.
