Ingredients

  • 1 pound ground beef (or turkey)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup mozzarella cheese, cubed
  • 8 oz spaghetti
  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • Fresh basil, for garnish
  • Black olives, sliced (for ‘eyes’)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.
  3. Take a small scoop of the mixture, flatten it, place a cube of mozzarella in the center, and roll into a ball. Repeat with remaining mixture.
  4. Place meatballs on the baking sheet and bake for 20–25 minutes, until golden brown and cooked through.
  5. Meanwhile, cook spaghetti according to package directions. Drain and set aside.
  6. In a skillet, heat olive oil, add marinara sauce, and let simmer for a few minutes. Toss in the cooked spaghetti until evenly coated.
  7. Plate the spaghetti, top with baked meatballs, and garnish each meatball with sliced black olives for ‘eyes.’
  8. Sprinkle with fresh basil and serve immediately.
