- 2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/2 cup dark chocolate chips, melted (for spiderweb design)
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- Mix chocolate cookie crumbs with melted butter and press into the bottom of the pan to form a crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until combined. Stir in vanilla and sour cream until creamy.
- Pour filling over the crust and smooth the top.
- Bake for 45–50 minutes, until edges are set and center is slightly jiggly.
- Let cool completely, then refrigerate for at least 4 hours or overnight.
- Once chilled, pipe circles of melted chocolate over the cheesecake. Drag a toothpick from the center outward to create a spiderweb pattern.
Notes
For best results, use room-temperature ingredients. Don’t overmix the batter, and chill the cheesecake fully before decorating. No water bath needed!
