- 4 bone-in, skin-on chicken thighs
- 2 tablespoons harissa paste
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- Fresh parsley or cilantro for garnish
Instructions
- In a large bowl, combine harissa paste, olive oil, salt, pepper, minced garlic, lemon zest, and lemon juice. Mix well to form a thick marinade.
- Add chicken thighs and coat evenly with the mixture. Marinate for at least 30 minutes or up to overnight in the refrigerator.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Arrange chicken thighs skin-side up on the prepared sheet, ensuring they are not crowded.
- Roast for 35–40 minutes, until the skin is golden and crispy and the internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for 5 minutes to allow juices to redistribute.
- Garnish with fresh parsley or cilantro and serve warm.
