This one-pan smoked sausage and potatoes dinner is the ultimate weeknight lifesaver—crispy potatoes, caramelized sausage, fresh green beans, and bold seasoning, all ready in 30 minutes.

- 24 oz Yukon gold or baby potatoes, cut into bite-size pieces
- 13 oz smoked beef sausage, sliced into ½-inch rounds
- 1 lb fresh green beans, trimmed and chopped
- 1 packet Italian dressing mix
- ¼ cup olive oil
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
Instructions
- Preheat oven to 400°F. Line a large sheet pan with parchment paper or spray with cooking spray.
- In a large bowl, mix olive oil, Italian dressing mix, garlic powder, and black pepper.
- Toss chopped potatoes in the seasoning mixture and spread in a single layer on the pan. Roast for 5 minutes.
- Meanwhile, toss sliced sausage and green beans in the same bowl with remaining seasoning.
- After 5 minutes, flip potatoes. Add sausage and green beans to the pan and spread everything out evenly.
- Return to oven and roast for 15 more minutes, or until potatoes are golden and sausage is browned.
- Serve hot and enjoy!
Notes
Flip potatoes for even browning. Don’t overcrowd the pan—use two if needed. Try other veggies like bell peppers, zucchini, or onions. For a spicier version, use Cajun sausage or add red pepper flakes. Leftovers make a great breakfast hash with eggs.
