Description
This slow cooker lemon garlic roast chicken is tender, juicy, and full of bright citrus and herb flavor — a comforting, hands-off dinner that’s perfect for busy families.

- 1 whole chicken, about 4 to 5 pounds
- 1 lemon, halved
- 1 whole head of garlic, halved crosswise
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1 teaspoon crushed red pepper flakes (optional)
- 1 onion, quartered
- 2 or 3 sprigs fresh rosemary or thyme
Instructions
- Pat the chicken dry with paper towels.
- In a small bowl, mix salt, pepper, paprika, thyme, onion powder, and red pepper flakes.
- Rub chicken with olive oil, then season generously with the spice mix — including under the skin and inside the cavity.
- Stuff the cavity with lemon halves, garlic halves, rosemary, and a few onion quarters.
- Place remaining onion quarters at the bottom of the slow cooker.
- Place the chicken breast-side up on top of the onions.
- Cover and cook on low for 6–7 hours or high for 3.5–4 hours, until internal temperature reaches 165°F (75°C).
- Optional: For crispy skin, transfer chicken to a baking sheet and broil 4–5 minutes.
- Let the chicken rest for 10 minutes before carving.
Notes
No need to add extra liquid — the chicken creates its own juices. Store leftovers up to 4 days in the fridge or freeze for up to 3 months. Use bones for homemade stock.
