- For the Beef:
- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- For the Potatoes:
- 1½ pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 3 tablespoons olive oil
- 5 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, toss beef cubes with Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Let sit for 10 minutes, if time allows.
- Layer the halved baby potatoes on the bottom of the slow cooker. Drizzle with half of the melted butter and olive oil. Sprinkle garlic evenly over top.
- Add the seasoned beef on top of the potatoes. Drizzle with the remaining butter and oil mixture.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is fork-tender and the potatoes are soft.
- Gently stir beef and potatoes. Garnish with chopped parsley before serving.
Notes
Optional: Sear beef in a hot skillet for 2–3 minutes before adding to the slow cooker for extra flavor. Add extra veggies like carrots or mushrooms to stretch the meal. Store leftovers up to 3 days or freeze for 2 months.
