- 1 pound boneless, skinless chicken breasts
- 12 ounces smoked Andouille sausage, sliced
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 1/4 cup low-sodium chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 3 tablespoons tomato paste
- 1/2 cup tomato sauce
- 2 teaspoons Creole seasoning
- 1/4 teaspoon cayenne pepper
- 1 tablespoon brown sugar (optional)
- 1 can (14 ounces) black beans, rinsed and drained (optional)
- 2 green bell peppers, chopped (optional)
- 1/2 cup sliced green onions (optional)
- 2 tablespoons almond butter (optional)
- Salt to taste
- Brown rice for serving
Instructions
- Place chicken, sausage, onions, garlic, chicken broth, diced tomatoes, tomato paste, tomato sauce, Creole seasoning, and cayenne pepper into the slow cooker. Stir and cover with the lid.
- Cook on low for 6-8 hours or high for 3 hours.
- Once the cooking time is up, shred the chicken using two forks.
- If using optional ingredients (brown sugar, beans, peppers, almond butter), add them now and cook on low for another 20-30 minutes.
- Adjust seasoning to taste with salt or additional cayenne pepper for more heat.
- Serve over brown rice and top with green onions for garnish.
