Description

This Slow Cooker Balsamic Chicken is tender, sweet, tangy, and savory—all in one cozy meal. Loaded with Brussels sprouts, red potatoes, and a bold balsamic glaze, it’s the perfect hands-off dinner for busy nights.


Ingredients

  • 2 cups Brussels sprouts, halved
  • 2 cups baby red potatoes, halved
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • ¼ cup balsamic vinegar
  • â…“ cup low-sodium chicken broth
  • ¼ cup brown sugar (or 3 tablespoons honey or maple syrup)
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Toss Brussels sprouts and red potatoes with olive oil, salt, and pepper. Layer them in the bottom of your slow cooker.
  2. Pat chicken dry and season both sides with salt and pepper. Place over the vegetables.
  3. In a small bowl, whisk together balsamic vinegar, chicken broth, brown sugar, Dijon mustard, thyme, rosemary, oregano, red pepper flakes, and garlic.
  4. Pour sauce evenly over the chicken and vegetables.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is cooked through (165°F).
  6. Let rest for 10 minutes before serving. Spoon extra sauce over top and garnish with chopped parsley.

Notes

Use chicken thighs for extra juiciness. To thicken the sauce, transfer to a saucepan after cooking and simmer for 5 minutes. Leftovers store well for up to 4 days in the fridge or 2 months in the freezer.
