This Slow Cooker Balsamic Chicken is tender, sweet, tangy, and savory—all in one cozy meal. Loaded with Brussels sprouts, red potatoes, and a bold balsamic glaze, it’s the perfect hands-off dinner for busy nights.

- 2 cups Brussels sprouts, halved
- 2 cups baby red potatoes, halved
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- ¼ cup balsamic vinegar
- â…“ cup low-sodium chicken broth
- ¼ cup brown sugar (or 3 tablespoons honey or maple syrup)
- 2 tablespoons Dijon mustard
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Toss Brussels sprouts and red potatoes with olive oil, salt, and pepper. Layer them in the bottom of your slow cooker.
- Pat chicken dry and season both sides with salt and pepper. Place over the vegetables.
- In a small bowl, whisk together balsamic vinegar, chicken broth, brown sugar, Dijon mustard, thyme, rosemary, oregano, red pepper flakes, and garlic.
- Pour sauce evenly over the chicken and vegetables.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is cooked through (165°F).
- Let rest for 10 minutes before serving. Spoon extra sauce over top and garnish with chopped parsley.
Notes
Use chicken thighs for extra juiciness. To thicken the sauce, transfer to a saucepan after cooking and simmer for 5 minutes. Leftovers store well for up to 4 days in the fridge or 2 months in the freezer.
