  • For the Chicken and Veggies:
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chili powder (optional)
  • Salt and pepper to taste
  • 4 pita breads or flatbreads
  • 1 cup shredded lettuce
  • ½ cup shredded red cabbage
  • ½ cup cherry tomatoes, halved
  • ¼ cup thinly sliced red onion
  • Fresh parsley or cilantro for garnish
  • For the Herby Ranch Sauce:
  • ½ cup mayonnaise
  • ½ cup sour cream or Greek yogurt
  • 1 clove garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives or green onions, finely chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F. Line a sheet pan with parchment paper.
  2. Cut chicken into strips or chunks. Toss with olive oil, paprika, cumin, garlic powder, onion powder, chili powder (if using), salt, and pepper until well coated.
  3. Spread chicken evenly on the prepared sheet pan. Roast for 15–20 minutes, stirring halfway through, until golden and cooked to 165°F internally.
  4. While the chicken cooks, make the ranch: mix mayo, sour cream, garlic, herbs, lemon juice, salt, and pepper in a small bowl. Taste and adjust as needed.
  5. Wrap pita breads in foil and warm in the oven for the last 5 minutes of cooking, or heat in a skillet.
  6. Build your pitas: layer lettuce, cabbage, tomatoes, onion, roasted chicken, and drizzle with herby ranch. Garnish with fresh herbs and a squeeze of lemon if desired.

Notes

Double the ranch for leftovers—it’s great on everything. Swap pita for naan or tortillas. Add roasted bell peppers to the pan for more veggies. Don’t assemble ahead to avoid sogginess—keep ingredients separate for meal prep.
