  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • For Serving:
  • Creamy tahini sauce (store-bought or homemade)

Instructions

  1. Cook the Quinoa:
    • Rinse quinoa under cold water to remove bitterness.
    • Add quinoa, water, and salt to a saucepan and bring to a boil.
    • Reduce heat, cover, and simmer for 15 minutes.
    • Turn off heat and let sit (covered) for 5 minutes.
    • Fluff with a fork.
  2. Roast the Vegetables:
    • Preheat oven to 425°F.
    • Spread chopped veggies on a large baking sheet.
    • Drizzle with olive oil, sprinkle with seasonings, and toss well.
    • Roast for 30 minutes, stirring halfway through.
    • Broil for an additional 5 minutes if desired for crispy edges.
  3. Assemble the Bowls:
    • Divide quinoa into bowls.
    • Top with roasted vegetables.
    • Drizzle with tahini sauce.
    • Garnish with chopped parsley if using.

Notes

Cut vegetables into uniform pieces for even roasting. Don’t overcrowd the pan—use a large sheet for best crispiness.
