For the Chicken

- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
For the Garlic Herb Butter
- ½ cup unsalted butter, softened
- 4–5 cloves garlic, minced
- 2 tablespoons fresh parsley
- 1 tablespoon thyme leaves
- 1 tablespoon rosemary
- Zest of 1 lemon

- ¼ cup white wine or chicken broth
Instructions
- Make the Garlic Herb Butter: Mix softened butter, garlic, parsley, thyme, rosemary, and lemon zest until combined.
- Prep the Chicken: Pat the chicken dry. Season the cavity with salt and pepper.
- Apply the Butter: Gently lift the skin and spread half of the butter underneath. Rub the remaining butter over the top.
- Truss and Roast: Tie the legs together. Roast at 425°F for 20 minutes, then lower to 350°F and roast 45–60 minutes, until internal temp reaches 165°F in the thigh.
- Rest: Let the chicken rest, covered, for 15 minutes before carving.
- Serve: Drizzle with pan juices and serve with your favorite sides.
Notes
For crispier skin, dry the chicken in the fridge uncovered for a few hours before roasting. Add chopped root vegetables to the pan for a one-pan meal.
