Instructions

  1. Prepare the red velvet cake base:
    • Preheat oven and line baking pan with parchment paper.
    • Beat eggs until fluffy and pale.
    • Gradually mix in sugar and oil.
    • Add buttermilk, vinegar, vanilla, and red food coloring.
    • Sift together dry ingredients and fold them in.
    • Batter will be thin—this is perfect.
    • Bake until cake springs back lightly when touched, then let cool completely.
  2. Cut the mini cakes:
    • Use a 3-inch round or heart-shaped cutter to punch out cake rounds once fully cooled.
  3. Make the cream cheese whipped filling:
    • Beat cream cheese until smooth and fluffy.
    • Add cold heavy cream and whip on medium-high speed.
    • Slowly add granulated sugar until stiff peaks form.
  4. Assemble the minis:
    • Place one cake round down as the base.
    • Spoon about 1/4 cup of filling on top.
    • Top with another cake round and gently press down.
    • Chill for at least 2 hours to set.
  5. Decorate for Valentine’s Day:
    • Top with a swirl of filling.
    • Decorate with chocolate hearts, sprinkles, fresh raspberries, or chocolate shavings.

Notes
