Description

This Raspberry Tiramisu is a no-bake, fruity twist on the classic Italian dessert. Swapping espresso for tangy raspberry syrup and layering creamy mascarpone with vibrant jam, it’s a refreshing, elegant treat perfect for bridal showers, Valentine’s Day, or summer picnics.


Ingredients

  • 500g frozen raspberries (for jam)
  • 100g sugar (for jam)
  • 1 tbsp lemon juice (for jam)
  • 100g sugar (for syrup)
  • 120g water
  • 30g frozen raspberries (for syrup)
  • 3 tbsp limoncello (optional)
  • 450g cold mascarpone cheese
  • 120g powdered sugar
  • 2 tbsp lemon juice (for filling)
  • 1 tsp vanilla paste or extract
  • 480g (or 500ml) cold heavy cream
  • About 25 ladyfingers (Savoiardi)
  • Fresh raspberries and lemon slices for garnish

Instructions

  1. Make the raspberry jam: In a saucepan, combine 500g raspberries, 100g sugar, and 1 tbsp lemon juice. Cook until thickened (23–25 minutes). Cool completely.
  2. Make the raspberry syrup: Combine 100g sugar, 120g water, and 30g raspberries in a saucepan. Boil, simmer for 3 minutes, mash, strain, and add 3 tbsp limoncello (optional). Cool to room temperature.
  3. Prepare mascarpone filling: Beat 450g mascarpone, 120g powdered sugar, 2 tbsp lemon juice, and 1 tsp vanilla paste for 30 seconds. Add 480g heavy cream and whisk to medium-stiff peaks.
  4. Assemble: Spread a thin layer of cream in a 9×9 inch dish. Dip ladyfingers in raspberry syrup and lay half in the dish. Layer with half the cream and half the jam. Repeat layers and chill for at least 8 hours or overnight.
  5. Before serving, top with remaining raspberry jam and garnish with fresh raspberries and lemon slices.

Notes

Use fresh or frozen raspberries. Chill mixing tools before whipping cream. Can be made ahead and even frozen. Limoncello is optional and can be swapped with orange juice.
