These Raspberry Shortbread Thumbprint Cookies are buttery, delicate, and filled with sweet raspberry jam. They’re quick to make, beginner-friendly, and perfect for everything from cookie boxes to weeknight baking.

- ¾ cup salted butter, softened
- ½ cup granulated sugar
- 1 egg yolk
- 1½ cups all-purpose flour
- ½ cup raspberry jam (seedless recommended)
Instructions
- Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
- In a large bowl, cream the butter and sugar until light and fluffy, about 2 minutes.
- Add the egg yolk and beat until fully combined.
- Mix in the flour. The dough will appear crumbly but will come together.
- Chill the dough for at least 30 minutes to help prevent spreading.
- Roll about ½ tablespoon of dough into balls and place on the baking sheet.
- Use your thumb or the back of a spoon to make an indent in the center of each ball.
- Spoon or pipe raspberry jam into each indentation.
- Bake for 9 to 11 minutes until bottoms are lightly golden.
- Cool on the sheet briefly, then transfer to a wire rack to cool completely.
Notes
Use seedless jam for a smooth center and deeper indentations to prevent overflow. Chill the dough to maintain shape. These cookies can be baked ahead and frozen for convenience.
