Description

Flavorful, protein-packed vegan tacos made with quinoa, black beans, salsa, and simple spices — an easy, satisfying dinner the whole family will love.


Ingredients

  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 cup salsa
  • 1 tablespoon nutritional yeast (optional)
  • 6 small tortillas (corn or flour)
  • 1/2 cup guacamole
  • 1/4 cup finely chopped red onion
  • Fresh cilantro, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large skillet, heat 2 teaspoons of olive oil over medium heat. Add rinsed quinoa and tomato paste. Sauté for 2 minutes, stirring frequently.
  3. Add minced garlic and cook for 1 more minute.
  4. Pour in vegetable broth and cumin. Bring to a boil, then reduce heat, cover, and simmer for 10–12 minutes until quinoa is fluffy and liquid is absorbed.
  5. Stir in salsa and nutritional yeast (if using) until well combined.
  6. Spread quinoa mixture on the prepared baking sheet and bake for 20 minutes, until edges are slightly crispy.
  7. While quinoa bakes, warm black beans in a microwave-safe bowl for about 30 seconds. Set aside.
  8. Warm tortillas if desired. Divide quinoa and black beans among tortillas.
  9. Top with guacamole, red onion, and chopped cilantro.
  10. Serve immediately and enjoy!

Notes

Customize with your favorite toppings like lettuce, vegan cheese, or hot sauce. Store leftovers in the fridge for up to 4 days. Quinoa filling can also be frozen for meal prep.
