    • Cake Batter:
    • ¾ cup unsalted butter, softened
    • 1 cup sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1½ teaspoon baking powder
    • 1 teaspoon baking soda
    • ¼ teaspoon kosher salt
    • 1½ cup sour cream

 

  • Pumpkin Swirl:
  • 1 can (15 ounces) pumpkin puree
  • 1 egg
  • ⅓ cup sugar
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 325°F. Spray a 9×13-inch baking pan with nonstick spray or line with parchment paper.
  2. Make the streusel: In a bowl, mix brown sugar, flour, pumpkin pie spice, cinnamon, and salt. Cut in butter until crumbly. Stir in chopped pecans. Set aside.
  3. Mix the batter: Cream butter and sugar until fluffy. Add eggs one at a time, beating after each, then stir in vanilla.
  4. In another bowl, whisk flour, baking powder, baking soda, and salt. Alternate adding dry mixture and sour cream to the wet mixture. Mix just until combined.
  5. Prepare the pumpkin swirl: In a bowl, whisk pumpkin puree, egg, sugar, pumpkin pie spice, and cinnamon until smooth.
  6. Layer the cake: Spread half the batter into the pan, then the pumpkin mixture. Sprinkle half the streusel. Top with remaining batter and streusel.
  7. Bake for 50–55 minutes or until a toothpick comes out clean. Let cool before slicing.

Notes

Use room temperature ingredients for best texture. Don’t overmix the batter. Let cool completely for a clean swirl. Fresh pumpkin pie spice enhances flavor.
