Description

This Pumpkin Curry is an easy, flavorful, and comforting dish made with aromatic spices like turmeric, cumin, coriander, and garam masala. It’s perfect for a cozy family dinner or impressing your guests!


Ingredients

  • 2 lbs pumpkin, peeled, seeded, and cubed
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, peeled and grated
  • 2 tbsp tomato paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • ½ tsp chili powder (or more, to taste)
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • Toasted pumpkin seeds (optional garnish)
  • Plain yogurt or vegan yogurt for topping (optional)
  • Rice (for serving)
  • Naan or roti (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5-7 minutes until the onion becomes soft and translucent.
  2. Add minced garlic and grated ginger, cook for another minute.
  3. Stir in tomato paste and cook for 1-2 minutes to deepen the flavor.
  4. Bloom the spices (turmeric, cumin, coriander, chili powder) for about 30 seconds, stirring constantly.
  5. Add cubed pumpkin and coat it with the spice mixture.
  6. Pour in coconut milk and vegetable broth, and stir well. Season with salt and pepper to taste.
  7. Simmer the curry for 20-25 minutes or until the pumpkin is tender. Stir occasionally and add more broth or water if it gets too thick.
  8. Stir in garam masala and cook for another minute.
  9. Taste and adjust seasoning with more salt, pepper, or chili powder if needed.
  10. Serve over basmati or jasmine rice, and top with cilantro, lime, yogurt, and toasted pumpkin seeds.

Notes

You can add other veggies like spinach or peas to make the curry heartier. If you like more heat, increase the chili powder or add fresh chilies.
