  • 6 oz (170g) cream cheese, softened
  • 3 tablespoons (38g) granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon milk (optional, to adjust consistency)

Optional Toppings:

  • 2 tablespoons pumpkin seeds (pepitas) for crunch
  • A sprinkle of sugar to give the muffins a little extra sparkle

Instructions

  1. Make the Cream Cheese Filling: In a mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. Add a little milk if needed for a piping consistency. Chill the filling in the fridge.
  2. Mix Dry Ingredients: Whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt in a large bowl.
  3. Mix Wet Ingredients: In a separate bowl, combine pumpkin puree, egg, melted butter, and vanilla extract. Stir until fully combined.
  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry and mix gently until just combined.
  5. Fill the Muffin Cups: Line a muffin tin with paper liners and fill each cup about 2/3 full with batter.
  6. Pipe the Cream Cheese Filling: Pipe about 1 to 1.5 teaspoons of cream cheese filling into the center of each muffin.
