- 3 tablespoons (38g) granulated sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon milk (optional, to adjust consistency)

- 2 tablespoons pumpkin seeds (pepitas) for crunch

Instructions
- Make the Cream Cheese Filling: In a mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth. Add a little milk if needed for a piping consistency. Chill the filling in the fridge.
- Mix Dry Ingredients: Whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt in a large bowl.
- Mix Wet Ingredients: In a separate bowl, combine pumpkin puree, egg, melted butter, and vanilla extract. Stir until fully combined.
- Combine Wet and Dry Ingredients: Add the wet ingredients to the dry and mix gently until just combined.
- Fill the Muffin Cups: Line a muffin tin with paper liners and fill each cup about 2/3 full with batter.
- Pipe the Cream Cheese Filling: Pipe about 1 to 1.5 teaspoons of cream cheese filling into the center of each muffin.
- Optional Toppings: Sprinkle pumpkin seeds or a pinch of sugar on top of the muffins if desired.
- Bake: Bake at 350°F (175°C) for 18–22 minutes, or until a toothpick comes out clean (except for the cream cheese filling).
- Cool: Let the muffins cool for 10 minutes in the tin, then transfer to a wire rack to cool completely.
