- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a medium bowl, whisk together the pumpkin puree, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fold in the chocolate chips.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
Add nuts or dried fruit to the batter for added texture. You can also make these dairy-free by swapping vegetable oil with coconut oil and using dairy-free chocolate chips.
