Description

Smoky, hearty, and packed with just the right balance of sweet and spicy, this Pumpkin Chipotle Chili is a cozy fall favorite that comes together in one pot.

Ingredients

Scale
  • ½ medium onion, diced
  • 2 chipotle peppers in adobo sauce, roughly chopped
  • 1 tablespoon chili powder
  • ½ teaspoon cinnamon
  • 1 (15.5 oz) jar of salsa
  • 1 (15.5 oz) can pumpkin purée
  • 2 cans of red kidney beans, drained
  • ½ cup chopped walnuts
  • 1 cup apple juice
  • 1 cup vegetable broth

Instructions

  1. Dice your onion and sauté it in a large pot until softened.
  2. Add the chipotle peppers and sauté for another minute or two.
  3. Sprinkle in the chili powder and cinnamon, stirring until fragrant.
  4. Stir in the salsa, then add the pumpkin, beans, and walnuts. Cook for 3–4 minutes.
  5. Pour in the apple juice and vegetable broth. Stir everything together and bring it to a boil.
  6. Lower the heat to a gentle simmer, cover the pot, and let it cook for 25–30 minutes, stirring occasionally.
  7. Taste, adjust seasoning, and serve.

Notes

Make ahead and freeze for later—this chili tastes even better the next day! For a milder version, use only one chipotle pepper or remove the seeds.
