- ½ medium onion, diced
- 2 chipotle peppers in adobo sauce, roughly chopped
- 1 tablespoon chili powder
- ½ teaspoon cinnamon
- 1 (15.5 oz) jar of salsa
- 1 (15.5 oz) can pumpkin purée
- 2 cans of red kidney beans, drained
- ½ cup chopped walnuts
- 1 cup apple juice
- 1 cup vegetable broth
Instructions
- Dice your onion and sauté it in a large pot until softened.
- Add the chipotle peppers and sauté for another minute or two.
- Sprinkle in the chili powder and cinnamon, stirring until fragrant.
- Stir in the salsa, then add the pumpkin, beans, and walnuts. Cook for 3–4 minutes.
- Pour in the apple juice and vegetable broth. Stir everything together and bring it to a boil.
- Lower the heat to a gentle simmer, cover the pot, and let it cook for 25–30 minutes, stirring occasionally.
- Taste, adjust seasoning, and serve.
Notes
Make ahead and freeze for later—this chili tastes even better the next day! For a milder version, use only one chipotle pepper or remove the seeds.
