This Pumpkin Cheesecake Swirl is the perfect fall dessert — rich, creamy, and swirled with cozy pumpkin spice flavor. It’s elegant enough for the holidays, yet easy enough for a weeknight treat.

- For the Crust:
- 10 full sheets of graham crackers (about 170g)
- ¼ cup melted unsalted butter (56g)
- ¼ cup granulated sugar (50g)
- ½ teaspoon ground cinnamon
- For the Cheesecake Filling:
- 3 (8-ounce/226g) blocks of cream cheese, room temperature
- ¾ cup granulated sugar (150g)
- ½ cup packed light brown sugar (110g)
- ½ teaspoon salt
- 4 large eggs, room temperature
- 1 cup pumpkin purée (244g)
- ½ cup sour cream (120g)
- 2 teaspoons vanilla extract
- 1½ teaspoons pumpkin pie spice
- 2 tablespoons all-purpose flour
- Optional for Serving:
- Whipped cream
- A sprinkle of cinnamon or crushed graham crackers
Instructions
- Preheat oven to 350°F (175°C). Wrap the outside of a 9-inch springform pan with foil to prevent leaks.
- Crush graham crackers into fine crumbs using a food processor or a zip-top bag and rolling pin. Mix with sugar, cinnamon, and melted butter until the texture resembles wet sand.
- Press mixture firmly into the bottom and about 2 inches up the sides of the pan. Bake for 10–15 minutes, or until golden. Let cool while you prepare the filling.
- Reduce oven temperature to 300°F (150°C).
- In a large bowl, beat cream cheese until smooth and fluffy. Add granulated sugar, brown sugar, and salt. Mix until creamy.
- Add eggs one at a time, blending each fully. Mix in pumpkin purée, sour cream, vanilla, pumpkin pie spice, and flour until just combined.
- Pour two-thirds of the batter into the crust. Spoon dollops of the remaining pumpkin mixture on top and swirl gently with a knife or skewer.
- Place springform pan in a large roasting pan. Pour boiling water into the roasting pan until it reaches 1 inch up the side of the cheesecake pan.
- Bake for about 1 hour, until edges are set and center slightly jiggles. Turn off oven and let sit inside for 1 hour without opening the door.
- Remove from oven and water bath. Cool on a wire rack, then cover and chill for at least 6 hours or overnight.
- Run a knife around the edges before releasing the springform. Garnish with whipped cream and cinnamon if desired.
Notes
For clean slices, dip a sharp knife in hot water and wipe dry between cuts. Chill the cheesecake completely to help the swirl set and slice cleanly. Leftovers freeze well for up to a month.
