Description

This Pumpkin Banana Bread is a moist, flavorful loaf that combines ripe bananas and creamy pumpkin puree, spiced with cinnamon, nutmeg, and ginger. It’s the perfect treat for cozy mornings or an afternoon snack.

Ingredients

Scale
  • 1 cup mashed ripe bananas (about 3 medium bananas)
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract. Whisk until smooth and well-combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  5. If using, fold in the walnuts or pecans.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra flavor, try adding chocolate chips, dried cranberries, or a pinch of cloves. The bread stays fresh at room temperature for up to 3 days or can be refrigerated for up to a week.
