- 1 large fresh pineapple, cored and diced into bite-sized chunks
- 1 large English cucumber, sliced into half-moons
- 2 fresh limes, juiced and zested (about 3–4 tablespoons juice)
- ¼ cup fresh mint leaves, finely chopped (or substitute with cilantro)
- Optional: Pinch of sea salt and freshly cracked black pepper
- Optional: Red pepper flakes for a spicy kick
- Optional: Thinly sliced red onion for extra bite
Instructions
- Remove the core and tough outer skin from your pineapple and cut into bite-sized chunks (about ¾-inch cubes).
- Wash and slice the English cucumber into ¼-inch thick half-moons.
- In a large mixing bowl, combine the pineapple and cucumber. Add red onion if using.
- Pour in the fresh lime juice and sprinkle with lime zest.
- Fold in the chopped mint or cilantro evenly.
- Season with sea salt, black pepper, and red pepper flakes if desired.
- Chill in the refrigerator for 15–30 minutes before serving for best flavor.
Notes
For best texture and taste, use fresh pineapple and English cucumber. Adjust lime juice and herbs to taste. Best enjoyed within 24 hours of preparation.
