Ingredients

  • 12 slices of bread (sourdough, ciabatta, focaccia, or any white bread)
  • 1 cup of pesto (store-bought or homemade)
  • 2 large tomatoes (sliced into 1/4-inch rounds)
  • 1 ball of fresh mozzarella cheese
  • A pinch of salt
  • Butter (softened for spreading on bread)

Instructions

  1. Preheat your panini grill or skillet to medium-low heat.
  2. Spread a generous layer of pesto on one side of each slice of bread.
  3. Layer sliced fresh mozzarella cheese on top of the pesto.
  4. Top with sliced tomatoes and sprinkle with a pinch of salt.
  5. Place another slice of bread on top, pesto side down, and butter the top and bottom of the bread.
