Description
A moist and fluffy Orange Velvet Layer Cake infused with fresh orange juice and zest, layered with creamy frosting for a refreshing, citrusy twist on the classic velvet cake.

- 1 ½ cups butter, room temperature
- 2 ½ cups granulated sugar
- 5 large eggs, room temperature
- 1 tsp almond extract
- 2 tbsp orange zest
- 3 ¼ cups all-purpose flour (gluten-free works too)
- 1 tsp xanthan gum if using gluten-free flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 cup fresh orange juice
- ¾ cup shredded coconut
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 4 cups powdered sugar
- 2 tbsp orange juice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and line cake pans with parchment paper.
- Cream butter until fluffy. Add sugar gradually and beat until pale and light.
- Add eggs one at a time, mixing well. Stir in almond extract and orange zest.
- Whisk together flour, xanthan gum (if needed), baking powder, baking soda, and salt in a separate bowl.
- Alternate adding dry mixture and orange juice to butter mixture, starting and ending with flour. Mix until just combined.
- Fold in shredded coconut.
- Divide batter evenly between pans, smooth tops, and bake 25–30 minutes until a toothpick comes out with moist crumbs.
- Cool in pans 10 minutes, then transfer to wire racks to cool completely.
- For frosting: beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in orange juice and vanilla.
- Assemble cake by layering cake rounds with frosting between and on top. Frost sides fully or leave semi-naked for a rustic look. Garnish with zest or candied orange slices.
Notes
Use fresh orange juice and zest for best flavor. Fold in nuts for variation or omit coconut if desired. Can be made gluten-free or dairy-free with substitutions. Tastes even better the next day.
