Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter, sugar, and brown sugar until light and fluffy. Add in egg, orange juice, and orange zest.
- In a separate bowl, whisk together flour, salt, and baking soda.
- Gradually add dry ingredients to the wet mixture and mix until combined.
- Fold in the dried cranberries.
- Scoop tablespoon-sized portions of dough onto a baking sheet.
- Bake for 8 to 10 minutes until edges are lightly golden. Let cool for 2 minutes on the tray, then transfer to a wire rack.
- Mix powdered sugar, orange juice, and zest until smooth to make the icing.
- Drizzle icing over cooled cookies.
- Allow icing to set completely. Store cookies in an airtight container.
Notes
Use fresh orange zest for best flavor. Avoid overbaking to keep cookies soft. Chop cranberries if desired. Try adding white chocolate chunks or swapping in lemon for a fresh twist. Dough and baked cookies both freeze well.
