- 2¼ cups chicken broth
- 1 can (15 oz) nacho cheese sauce
- 1 can (10 oz) Rotel tomatoes with green chilies
- 1½ cups uncooked long-grain white rice
Instructions
- Heat olive oil in a large skillet over medium-high heat and cook chicken pieces with seasonings until browned and cooked through (165°F internal temperature).
- Add chicken broth, nacho cheese sauce, and Rotel tomatoes. Bring to a boil and stir together.
- Stir in uncooked rice, cover, and reduce heat to medium-low. Simmer for 20-25 minutes until the rice is tender and liquid is absorbed.
- Serve with your favorite taco-style toppings like sour cream, pico de gallo, or sliced avocado.
Notes
You can swap the chicken with ground beef or turkey, and adjust the spice level by using medium or hot Rotel tomatoes. Add beans or veggies for extra nutrition.
