Ingredients

  • 8 bone-in, skin-on chicken thighs (trimmed of excess fat)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil (any neutral oil like avocado or canola)
  • 3 1/2 cups low-sodium chicken broth
  • 1/4 cup heavy cream
  • Zest and juice of 1 large lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups orzo (dry)
  • 16 oz cauliflower rice (fresh or frozen)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken thighs on a large plate. Sprinkle them with Italian seasoning, salt, and pepper. Toss to coat well on all sides.
  2. Heat oil in a large Dutch oven or deep pan over medium-high heat. Sear the chicken in batches (4 at a time) until golden brown on both sides, about 5–6 minutes per batch. Set aside on a plate and drain excess fat.
  3. Return the pot to the stove. Pour in the chicken broth, cream, lemon zest and juice, salt, pepper, and orzo. Stir everything together.
  4. Nestle the browned chicken thighs back into the pot, making sure they’re partially submerged in the liquid.
  5. Cover the pot and bring to a boil. Then reduce the heat and simmer for 15 minutes. Stir gently halfway through cooking to prevent sticking.
  6. Turn off the heat. Stir in the cauliflower rice, cover the pot again, and let it sit for 5 minutes to steam.
  7. Sprinkle fresh parsley on top. Taste and adjust seasonings as needed. Serve hot and enjoy!

Notes

Use boneless thighs or breasts if you prefer—just reduce the cooking time. No orzo? Try pearl couscous or rice, adjusting cook time. For a dairy-free version, swap heavy cream with coconut milk or almond milk. Add greens like spinach at the end for extra nutrients. Reheats beautifully with a splash of broth.
