- 1 tablespoon extra virgin olive oil
- 1 large onion, chopped
- 1 pound ground turkey
- 3 cups any short pasta (penne, rotini, shells, etc.)
- 3 cups low-sodium vegetable or chicken stock
- 1 teaspoon salt
- Ground black pepper, to taste
- 1 pound broccoli florets
- 3 fresh tomatoes, diced
- 1 to 2 garlic cloves, grated
- A pinch of red pepper flakes (optional)
- 1/2 cup fresh parsley, finely chopped
- 1/2 cup Parmesan cheese, grated
Instructions
- Heat olive oil in a large Dutch oven or deep pot over medium heat. Add chopped onions and cook for about 3 minutes, stirring occasionally, until softened.
- Add ground turkey to the pot. Break it up with a spatula and cook for about 5 minutes until no longer pink.
- Stir in the pasta, broth, salt, and pepper. Use your spatula to level everything out. Cover the pot and reduce heat to low. Cook for 10 to 12 minutes, checking after 10, until pasta is al dente.
- Turn off the heat. Stir in broccoli, diced tomatoes, grated garlic, and red pepper flakes. Cover the pot again and let sit for 5 minutes to steam the veggies.
- Remove the lid and stir in chopped parsley and Parmesan cheese. Toss to combine and serve hot.
Notes
Use short pasta for best texture. To soften broccoli more, add it in with the pasta. For creamy texture, stir in a splash of cream or cream cheese at the end. Make it vegetarian by swapping turkey for white beans or chickpeas. Reheats well with a splash of broth.
