Description

A flavorful, family-friendly weeknight dinner made with juicy chicken, roasted veggies, and basil pesto — all in one pan and under 40 minutes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto (store-bought or homemade)
  • 1 pint cherry tomatoes
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes, lemon zest, fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken dry and place in a large ovenproof skillet or roasting pan.
  2. Spread half the pesto over chicken and season with salt and pepper.
  3. In a bowl, toss cherry tomatoes and asparagus with olive oil, salt, and pepper.
  4. Arrange veggies around the chicken and dollop remaining pesto on top. Toss gently.
  5. Roast for 20–25 minutes, or until chicken reaches 165°F (74°C) internally.
  6. Let chicken rest 5 minutes before slicing. Garnish with fresh basil and red pepper flakes if using.
  7. Serve with crusty bread, rice, mashed potatoes, or pasta.

Notes

Swap asparagus for green beans, zucchini, or bell peppers. Use chicken thighs if preferred. For dairy-free, use pesto without cheese.
