Description

Rich chocolate, creamy peanut butter, chewy oats, and zero oven time. These no bake cookies come together fast and always hit the spot.


Ingredients

Scale
  • 1/2 cup salted butter
  • 1 3/4 cups granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2/3 cup creamy peanut butter
  • 3 cups quick oats

Instructions

  1. Line two baking sheets with parchment paper or set out cupcake liners.
  2. In a medium saucepan, combine the butter, sugar, cocoa powder, and milk.
  3. Cook over medium heat, stirring often, until the mixture reaches a full rolling boil.
  4. Let it boil for 60 seconds without stirring.
  5. Remove from heat.
  6. Stir in the vanilla extract and creamy peanut butter until smooth.
  7. Add the quick oats and mix until everything is well combined.
  8. Scoop the mixture onto the lined baking sheets using a medium cookie scoop or two spoons.
  9. Let the cookies rest at room temperature for 20 to 30 minutes until firm.

Notes

Do not skip the 60-second boil. It is the key step that helps the cookies set properly. Use quick oats for the best texture.
