Ingredients

  • 1/2 cup granulated sugar (or use coconut sugar for a healthier option)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (whole wheat flour works well too)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans or line them with parchment paper.
  2. In a large bowl, combine pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined.
  5. If adding optional extras like walnuts or chocolate chips, fold them into the batter now.
  6. Divide the batter evenly into mini loaf pans, filling each about two-thirds full.
  7. Bake for 45-50 minutes. Insert a toothpick into the center to check for doneness. If it comes out clean, the loaves are ready.
  8. Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes
