- 1 tsp baking soda

- 1 cup maraschino cherries (well-drained and finely chopped)
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs, vanilla extract, almond extract (if using), and pink gel food coloring. Mix until combined.
- Whisk together flour, cornstarch, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients. Mix until just combined.
- Fold in chopped maraschino cherries and chocolate chips.
- Scoop dough into golf-ball-sized balls and place on prepared baking sheets, spacing 2 inches apart. Press extra cherries and chocolate chips on top for a decorative look.
- Bake for 10-12 minutes, or until edges are golden but centers are soft. Let cookies cool on the baking sheet for 15 minutes before transferring to a wire rack.
