  • 4 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 2 tsp smoked paprika
  • 2 lbs Brussels sprouts, trimmed and halved
  • 1/2 (1 lb) package thick-sliced bacon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F and line a large sheet pan with parchment paper.
  2. Make the sauce: In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, smoked paprika, salt, and pepper.
  3. Prep the Brussels sprouts: Place trimmed and halved sprouts on the pan. Drizzle with 6 tablespoons of the sauce. Toss to coat, then arrange cut-side down.
  4. Roast: Bake for 15 to 20 minutes until caramelized and crispy on the edges.
  5. Cook the bacon: Microwave between paper towels for 6 to 7 minutes, flipping halfway, until crisp. Chop into small pieces.
  6. Finish: Transfer roasted sprouts to a serving bowl. Add remaining sauce and chopped bacon. Toss gently and serve warm.

Notes

For a vegetarian version, skip the bacon and use toasted pecans, crispy onions, or roasted chickpeas. For extra crunch, roast the sprouts a few minutes longer and always keep them cut-side down for maximum caramelization.
