- 4 tbsp maple syrup
- 2 tbsp Dijon mustard

- 2 lbs Brussels sprouts, trimmed and halved
- 1/2 (1 lb) package thick-sliced bacon
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F and line a large sheet pan with parchment paper.
- Make the sauce: In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, smoked paprika, salt, and pepper.
- Prep the Brussels sprouts: Place trimmed and halved sprouts on the pan. Drizzle with 6 tablespoons of the sauce. Toss to coat, then arrange cut-side down.
- Roast: Bake for 15 to 20 minutes until caramelized and crispy on the edges.
- Cook the bacon: Microwave between paper towels for 6 to 7 minutes, flipping halfway, until crisp. Chop into small pieces.
- Finish: Transfer roasted sprouts to a serving bowl. Add remaining sauce and chopped bacon. Toss gently and serve warm.
Notes
For a vegetarian version, skip the bacon and use toasted pecans, crispy onions, or roasted chickpeas. For extra crunch, roast the sprouts a few minutes longer and always keep them cut-side down for maximum caramelization.
