- 2 ounces Pecorino Romano cheese, grated (large holes of a box grater)
- 1 ounce Parmesan cheese, grated (large holes of a box grater)
- ½ teaspoon freshly ground black pepper (plus extra for topping)
Instructions
- Preheat your oven to 400°F. Place racks in the upper and lower thirds.
- Line two baking sheets with foil or silicone baking mats.
- In a small bowl, mix Pecorino, Parmesan, and pepper until combined.
- Scoop about 1 heaping tablespoon of the cheese mixture and place on the prepared sheet. Pinch into a mound.
- Repeat with the remaining cheese, spacing mounds 2 inches apart.
- Top each with an extra crack of black pepper.
- Bake for 10 minutes, rotating sheets halfway through, until golden and bubbling has almost stopped.
- Let cool completely for about 10 minutes before serving.
Notes
For a festive twist, spoon the cheese mixture into Halloween-shaped cookie cutters directly on the baking sheet before baking. Shapes like pumpkins, bats, or ghosts make them extra fun.
