Ingredients

  • 2 ounces Pecorino Romano cheese, grated (large holes of a box grater)
  • 1 ounce Parmesan cheese, grated (large holes of a box grater)
  • ½ teaspoon freshly ground black pepper (plus extra for topping)

Instructions

  1. Preheat your oven to 400°F. Place racks in the upper and lower thirds.
  2. Line two baking sheets with foil or silicone baking mats.
  3. In a small bowl, mix Pecorino, Parmesan, and pepper until combined.
  4. Scoop about 1 heaping tablespoon of the cheese mixture and place on the prepared sheet. Pinch into a mound.
  5. Repeat with the remaining cheese, spacing mounds 2 inches apart.
  6. Top each with an extra crack of black pepper.
  7. Bake for 10 minutes, rotating sheets halfway through, until golden and bubbling has almost stopped.
  8. Let cool completely for about 10 minutes before serving.
