Description
This lemon herb marinated grilled chicken is juicy, bright, herby, and full of fresh lemon flavor. It works beautifully on the grill or on the stovetop for an easy weeknight dinner.

- 2 pounds chicken breasts or thighs, trimmed
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
Instructions
- Add the olive oil, lemon juice, dried basil, dried parsley, salt, black pepper, garlic powder, onion powder, and crushed red pepper flakes to a gallon zip-lock bag.
- Gently mix the marinade until everything is combined.
- Add the chicken to the bag.
- Seal the bag tightly, squeezing out the extra air.
- Refrigerate for at least 1 hour, or up to 12 hours for more flavor.
- Preheat the grill to medium heat.
- Place the chicken on the hot grill.
- Cook for 5 to 7 minutes on each side, or until the juices run clear and the chicken is cooked through.
- Let the chicken rest for about 5 minutes before slicing and serving.
- For stovetop cooking, heat 2 tablespoons of olive oil in a skillet over medium-high heat.
- Add the chicken in a single layer.
- Cook for about 5 minutes, then flip and cook for another 5 minutes, or until firm and cooked through.
Notes
Use fresh lemon juice for the brightest flavor. Do not marinate longer than 12 hours because the lemon juice can affect the texture of the chicken. Let the chicken rest before slicing to keep it juicy.
