- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, woody ends trimmed and cut into 2-inch pieces
- 3 garlic cloves, minced
- 1 lemon, zested and juiced
- 2 tbsp olive oil, divided
- 1 tbsp butter (optional)
- Salt and black pepper, to taste
- Red pepper flakes, optional
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse shrimp under cold water and pat dry. Season with salt and pepper.
- Trim woody ends off asparagus and cut into 2-inch pieces.
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
- Increase heat to medium-high and add shrimp. Cook 2–3 minutes per side until pink and opaque. Remove and set aside.
- Add remaining 1 tbsp olive oil to skillet. Add asparagus and cook 3–4 minutes until tender-crisp.
- Return shrimp to skillet. Add lemon juice, zest, and butter (if using). Toss to combine and cook for 1–2 minutes.
- Garnish with parsley and red pepper flakes if desired. Serve hot.
